Introduction to Descriptive Analysis:

To get familiar with the basic steps of descriptive analysis by evaluating three different apple
juice products using appropriate references.

Data of 3 panelists is collected and used for data analysis and drawing results.

Motts’ 100% Apple Juice, filtered 64 fl. oz. (1 bottle)
Great Value 100% Apple Juice/any store brand, 64 fl. oz. (1 bottle)
3.25 oz. cups (or any other sizes that you have) for sample serving
Cups for rinse water
Spring water or other odorless water of higher purity.
Napkins, spill control, and cleanup supplies
Methods/procedure:
The procedure is divided into 2 parts as follows,
Part I Term Generation
In this part, the two products below are used to generate the descriptive terms for the
products. The samples are presented to each panelist in the same order.

Sample 506 – Motts’ 100% Apple Juice, filtered
Sample 248 – RW Knudsen Organic Apple Juice
Different attributes identified by the panelists from the two samples are noted down.
The panel leader collects the terms each panelist generated, during which redundant,
vague, or hedonic terms will be eliminated upon the agreement of all the panelists. The
term list will be expanded and refined during the discussion after tasting the second
sample. The definitions of the terms should be clarified in this step.
Predefined scale: 15-point intensity scale with 0.5 increments is used. The anchor terms
for the scales on the ballots would be: 0 (none) to 15 (extremely high).

Part II Descriptive Evaluation
In this part, the terms generated from part I will be used to evaluate 3 products. Samples
must be coded by 3-digit random numbers as suggested below,

The three samples and three evaluation ballots are shared with each panelist in randomized
order, along with references and ref/def sheet.
Panelists evaluate each sample independently on the evaluation ballot. Panelists evaluate
one sample at a time for all the attributes on the ballots.
the data on paper ballots are copied into an excel sheet. Each panelists’ data are treated for
one given sample as a replication. Therefore, each sample should have 3 replications in the
end.

Data analysis & discussion: Anova
The panelists data is used for running Anova analysis to find out the significant differences between the
products for all the attributes.
