Journaling is an activity used by students and professionals alike for self-reflection. It has many personal and professional benefits including reducing stress and increasing learning (Alford, Malouff, & Osland, 2005; Liuolienë & Metiûnienë, 2009). You will be asked to journal about your thoughts, experiences, and/or insights. Please refer to the Journal Rubric under the Course Info tab for grading information.

Americans are utilizing more than their fair share of resources. Consider just a few statistics found on the Mindfully website:

  • Americans represent 5% of the world population but consume 24% of the world’s energy.
  • While 250 million people have died of hunger-related causes in the past quarter-century, Americans eat 815 billion calories of  food each day (enough to feed 80 million people) and throw away 200,000 tons of edible food daily.
  • The average American utilizes 159 gallons of water per day, and individuals in the rest of the world survive on 25 gallons.
  • Americans own roughly one-third of the world’s automobiles, and produce 22% of world’s total industrial carbon dioxide emissions.
